Welcome to Meal Plan Monday, where I share my weekly meal plan. I’m sharing these as a way to help encourage YOU to meal plan too! I hope you’ll get some ideas and inspiration. I can’t believe it’s already February. As my due date for Baby Number 3 nears, I’m thinking more and more about meals I can make ahead and freeze for those first few weeks. I’ve still got a couple of months before Baby arrives, but my freezer-stocking method isn’t to dedicate an entire day to cooking freezer meals. Instead, I usually just double up on a dinner and freeze half of it. So this month (and probably next) I’ll be selecting some dinners I can easily do that with.
I’ve got a looming deadline this week and will probably be working a little later than usual in the afternoons. So I’ve got a couple of quick and convenient dinners planner for early in the week. Then we have Family Dinner planned for this coming Sunday where my mom and my sister’s family come for dinner at our house. Everyone usually pitches in to make or bring part of the meal and we usually don’t know what we’re having until a day or two beforehand.
Here’s our meal plan for the week:
Monday (today): Garlic Drumsticks, Macaroni and Cheese, Steamed Green Beans (I’ll double the drumsticks, but only cook half. The other half will go in the freezer, ready to go for a future dinner.)
Tuesday: Loaded Baked Potatoes*
Wednesday: Turkey Pot Pie (I’m doubling and freezing half of this. The way I do it is make a double batch of the filling and just freeze the filling. Then when I’m ready to make another turkey pot pie, I defrost the filling and put it in a deep baking dish and cover it with a pre-made pie crust before baking as usual.)
Thursday: Bacon Swiss Quiche and Fruit
Friday: YOYO (You’re On You’re Own!)
Saturday: One Post Creamy White Bean and Ham Tortellini Soup (I’m really looking forward to trying this. It looks delish!)
Sunday: Family Dinner
*Meatless Meal – Each week, I try to plan for at least one meatless dinner. Like Meatless Monday, but we don’t restrict it to just Mondays. We also almost always go meatless for weekday breakfasts too.
