Welcome to my first Meal Plan Monday, where I will share my weekly meal plan. Many of you may have vowed to start planning meals as a New Year’s resolution, so I’m sharing these as a way to help encourage YOU! I hope you’ll get some ideas and inspiration. And if you have any questions about my meal planning methods, just ask in the comments!
Since this is my first Meal Plan Monday, here are a few notes to let you know what this is all about:
Meal planning is one of my secrets for balancing being a work-at-home mom. I’ve experimented (and continue to experiment) with planning meals an entire month at a time, every two weeks, and just weekly. And I must admit – I still change and adjust what I do all the time! But one thing that does not change is that I always plan meals for each week. It just helps keep me sane!
I’ve also experimented with planning dinners only; breakfast, lunch, and dinner; all meals plus snacks; weekdays only; and every day of the week. I honestly can’t say which way is “best”. Different methods have worked better for me at different times. It all just depends on your needs. What works best for you may be totally different than what works for me.
This week is pretty tame, as far as evening activities go. I have one evening meeting, the kids don’t have any activities, and we don’t have any family plans away from the house. But I am working on getting back into the swing of things after taking some time off around the holidays, and that always takes some adjusting! I also have a major deliverable due for a new project with a new client, so I’ve got a tiny bit of anxiety over that.
Our Meal Plan for the week:
Monday (today): Crockpot Beef & Broccoli with Brown Rice (My recipe is very similar to this Crock Pot Beef and Broccoli by Life in the Lofthouse.)
Tuesday: Winter Squash and White Bean Risotto*
Wednesday: Homemade Chicken Noodle Soup (with homemade broth that my hubby made last week!)
Thursday: Ham and Spinach Quiche
Friday: YOYO (Your On Your Own! This usually means leftovers, or it could be a quick sandwich or something. Or, if my husband decides he wants to eat out, this would be the night we would do that – although that isn’t something we do very often.)
Sunday: Family Dinner (My mom, my sister and her fiance, and my nephew all come over for dinner a couple of times a month. Everyone pitches in and makes/brings a dish and I usually don’t know what we are having until the day before.)
*Meatless Meal – Each week, I try to plan for at least one meatless dinner. Like Meatless Monday, but we don’t restrict it to just Mondays. We also almost always go meatless for weekday breakfasts too.
